How to Make an Ube Latte
Whisk around 1–2 teaspoons of ube powder with a small splash of hot water until smooth, add hot or cold milk, and sweeten to taste.
Scoop, whisk, pour.
The paste-first method keeps it silky and clump-free.

Scoop
Add 1–2 teaspoons (about 5g) of purple ube powder to your cup.

Whisk
Add 2–3 tablespoons of hot water and whisk into a smooth, glossy paste.

Pour
Top with steamed or cold milk. Sweeten to taste and stir.
Two ways to pour.
Hot latte: whisk the paste, then add 200ml of hot (not boiling) milk. Froth for a cafe-style finish.
Iced latte: whisk the paste with a little hot water, fill a glass with ice, add cold milk, then pour the purple over the top for a layered look. Stir before sipping.
Small things, big difference.
No clumps
Always make a paste with a little hot water first, before adding milk.
Sweeten to taste
Ube is only gently sweet. Add honey, maple, or your syrup of choice.
Best milks
Oat and coconut are creamy favorites; whole milk is classic.
Keep it vivid
Avoid boiling water — hot, not boiling, keeps the purple bright.

If your cup isn't quite right.
Why is my ube latte clumpy?
Clumping happens when the powder meets too much liquid at once. Whisk the powder with a small splash of hot water into a thick paste first, then add the milk gradually while stirring.
How much ube powder should I use per latte?
Start with around 5g, about 1–2 teaspoons, per drink. Increase it for a deeper colour and a stronger flavour.
Why does my ube latte taste too earthy?
Add a little more sweetener and use a creamier milk such as oat or coconut. Ube is only gently sweet on its own, and a pinch of vanilla rounds out the flavour.
Why does the purple colour look muted?
Use hot rather than boiling water and avoid over-diluting the drink. More powder relative to milk gives a deeper purple.
Can I make an iced ube latte?
Yes. Make the paste with a little hot water, fill a glass with ice, add cold milk and pour the ube over the top. Stir before drinking. See more ube recipes.
